Woodsmith and Miner villagers

Look I know there it seems to have little reason to have these in-game, but there is also a strong lack of reason for them not to be in the game. 

Woodcutting villagers can cut down some trees and trade wood-based items. 

Mining villagers can mine stone and some ores.

Both can have their tool upgraded through trades. For example, you can either trade an axe for some emeralds, or some iron for some emeralds so they themselves can make the axe (or pickaxe for miner villager.)
