It would be fun for sheep to behave differently than other animals in the game and more like real sheeps. When a player moves within a certain radius of a sheep mob, the sheeps should herd together and begin moving away from the perceived threat. The player would then have 2 options for catching the sheeps: set up an enclosure to herd the sheeps into by predicting and influencing their movements; or chase them down by sprinting which would cause the sheeps to try to run away faster. When in a tightly confined space, the sheeps should move away from and around a player as best as they can, almost as if they are repelled magnetically by the user. Wolves and other threatening mobs would trigger the same herd behavior from the sheeps.
The movement of sheep herds should be easily predictable and fairly easy to control so players can still harvest wool and mutton easily for beds and food in the early game. Perhaps you could eventually tame a sheep over time by feeding it and not hurting it, similar to villagers.
