Mojang wants to make every item they add these days easily accessible; so renewable cinnabar just seams right. My idea is that like sulfur, cinnabar would eventually grow its own "spike". This "spike" would be more boulder-shaped, rather than a triangular. Mining it would give you a couple cinnabar lumps, and you can place one of those back down on the ground, wait for it to grow again, and then repeat. 4 cinnabar lumps could be used to craft cinnabar. This may not be the best idea, but it would surely add to the aesthetic of the sulfur caves. Cinnabar lumps would not be able to stack like dripstone or sulfur spikes, but would still deal a lot of damage if they fall on a player. They would also be rarer than sulfur spikes, to not totally turn the sulfur caves into a spiky mess. Personally, I think this is a great idea that would fit the theme of the caves.
