As of right now, the sniffer is a hard mob to get compared to the fact that it doesn't add any unique value for the players, there is no real incentive for anyone to revive this ancient beast other than the two decorative plants and for the mob itself, because of this, I have some suggestion to make the sniffer a more desirable goal for players.
Torchflower: It could be a great alternative ingredient for a fire resistance or a glow potion. It could also be immune to fire and give light, maybe it could be only planted on magma blocks or blocks near lava to grow two block tall. When destroyed it could cause fire or when two blocks tall, place a lava source block in its place.
Pitcher plant: Ingredient for a new potion: Potion of charming, when used, hostile mobs will turn neutral towards the player. When used with fermented spider eye we get the opposite, potion of disgust. Will cause all hostile mobs to focus the target. Pitcher plant could also be the opposite to the torchflower, it could hold water in its head and release it when destroyed.
Sniffer: Ancient berries could on the adult sniffers' backs. The babies would consume those every now and then in order to grow, it would function like breastmilk, players could harvest it with shear. The berry could give a small amount of saturation.
Other things the sniffer could sniff up: Ancient sapling, ancient grass, ancient grass block. These ancient plants could theme around blue, since we don't have blue planks and grass yet.
