Make sulfur pools sometimes give random effects

Sometimes (rarely), particular potent sulfur blocks could give a random effect (positive or negative). This would encourage getting into the pools to find the rare good ones (like regeneration, etc), with the possibility of also finding negative ones along the way (poison, etc), increasing the risk. These could also encourage building in a particular location (to have a good hot spring nearby) or taking it home to make one in your base with the positive effect or negative as defense. 

Also, because of the unrenewability of these special potent sulfur blocks, these springs would remain rare and balanced, encouraging exploration.

  Thinking about it, it might also be fun to always have a guaranteed random effect but only on surface springs (sulfur springs). That way you'd always get a dopamine rush when finding one, while keeping it rare (only one per sufur biome, and random effect).
