Currently, there is a fundamental mechanical difference in how the naturalRegeneration gamerule processes hunger and saturation between the two versions of Minecraft. In Java Edition, the exhaustion and saturation math allows for "Fast Regen." When a player has a nearly full hunger bar and any amount of saturation, they heal at a rate of $1$ point (half-heart) every 10 ticks (0.5 seconds). In Bedrock Edition, this "Fast Regen" state simply does not exist. Players are locked into a hardcoded regeneration speed of $1$ point every 80 ticks (4 seconds), regardless of how much "Gold" level food (Golden Carrots/Apples) they have consumed.
