Currently there are some biomes that have higher deposits of ores (such as higher gold count in the badlands), and I think the sulfur caves would be a great opportunity to do something similar. Since we got spoiled with 2 new block-sets (sulfur and cinnabar) we wouldn't necessarily need a new ore. If we did go the route of new ores, I think Pyrite would be a great one. Pyrite, known as Iron Sulfide, would compliment the sulfur-rich environment. It's also of course called Fool's Gold, which if added, could introduce interesting gameplay alongside regular gold (think piglin trading, enchantments etc.)
If we don't want to add a new ore, then I propose making Lapis Lazuli spawn more frequently in the Sulfur Caves. Lapis gets its iconic blue hue from sulfur (trisulfur specifically), and would act as another reason to seek out these caves. Limiting the deposits of other ores in these caves could also highlight the abundance of lapis.
