In real life, this happens because polar bears are raised in humid environments, allowing algae to grow and colonize the hollow spaces in their fur. But in Minecraft, it would be interesting if feeding a polar bear kelp caused its fur to turn slightly green. It should also have a natural green hue if spawned in humid biomes like the Swamp.
