I'd be a little disappointed if Sulfur went the way of Resin and was only decorative especially when it could provide some really interesting and handy features.
Here are some:
Sulfur should be dropped like Glowstone Dust from Sulfur Blocks (or "Brimstone")
Sulfur could be used to craft Gunpowder with Charcoal.
Sulfur could be used to advance Copper Oxidisation by a stage.
Sulfur could be brewed into Potions of Disenchantment (which negates or reduces the potency of enchantments when active)
Sulfur could be used on a Water Cauldron to create an Acidic Cauldron which would let us remove dye from more items such as Terracotta, Stained Glass, Stained Glass Panes and Candles.
Using a Bottle on an Acid Cauldron could give a Bottle of Acid which can be thrown, blinding players or promoting the spread of nearby Fire.
These features all align with either real life applications or typical fantasy uses of Sulfur.
