I sometimes get motion sick from minecraft if I play it too long and the nauseous effect from the pools would make exploring the caves almost impossible if I ever wanted the block under the water, so I think rather than the sulfur water pools making the players nauseous and having the screen wiggle back and forth (causing real life nausea), the sulfur water should just make the player take damage, as real life sulfur water (sulfuric acid) is extremely dangerous. (also teaching children how to be safe around potentially dangerous chemicals!)
Also, I think the potent sulfur should be able to be crafted into a powder of some kind, as in real life sulfur is a mineral, and should be used as such. If mixed with water in a cauldron could make sulfuric acid, and then that sulfuric acid could be used as a potion ingredient. And the sulfur powder, as well as bottled sulfur gas, could also be a potion ingredient.
