The new sulfur blocks should drop sulfur as an item. It could be crafted into Sulfur Blocks, used as a substitute for gunpowder in crafting recipes, composted to make bonemeal, and brewed into potions of nausea. This would unlock more crafting recipes for peaceful players and allow the nausea effect to become a potion.
