Using Sulfur, Charcoal, Guano to craft Gunpowder

In real life to create gunpower you need mix sulfur with charcoal and potassium nitrate. The natural source of potassium nitrate is guano, the poops of bats. Minecraft already has bats but making them spawn guano like a chicken its eggs would worse performance, killing bats for their guano I guess won't be done by Mojang, so I suggest feeding bats with spider eyes which will make them produce guano as they eat insects. Casual and especially Peaceful Mode players have the hardest time getting gunpower in big amounts.

  Guano is accumulated excrement and remains of birds, bats, and seals, can be find in caves and on the islands, they should need to react in Brewing Stand or Cauldron to get saltpeter, then craft it with sulfur and charcoal to get gunpowders

  Guano is source of potassium nitrate aka saltpeter. Saltpeter can be also obtained from shells so nautilus shell could be used instead of guano, eliminating creation of a new item just for gunpower recipe.

  And no, Minecraft is simplified. We smelt beach sand in regualar furnace into glass while in real life this process happens with quartz sand in huge very very hot furnace and after that you also have to blow it, shape it into what you need. We don't have to go overcomplicated with saltpeter.
