There is a very little selection of flying mobs in general, and there only being two birds, chickens and parrots. I, along as many others, wish for a larger variety of birds. A few suggestions as to where to start:
1. Pigeons. These pigeons could act as messanger birds and add a more realistic feel to sending messages to your friend in Minecraft that isn't just a DM or /msg.
2. Owls. Owls could be carriers. If you attach a bundle to your owl, you can have it carry stuff for you or just keep it safe.
3. Crows. Crows could be an obstacle of sorts, that will take your golden things from your inventory. If you feed them bread, they'll lead you to a pillager post (or another build, this just seems the best fitted personally!)
4. Seagulls. Seagulls, much like crows, could be an obstacle (just like real life!). They'll steal your food and seeds from your inventory. If killed, they'll drop feathers (like the normal feathers that chickens drop).
5. Hummingbirds. Hummingbirds could help pollinate plants and cause more flowers to spawn near an area. They'd generally just act as an aesthetic feature, and add more life to Minecraft!
