hi! i have the same exact problem as you, microtia in the right ear. i also think minecraft should have this feature, but just to help people out i have some alternatives to make the game more accessible:

    - depending on the nature of your deafness, try different headphones. my hearing loss is conductive, which means by using bone conduction headphones designed for people like me, i can enjoy stereo sound. i use Trekz.

    - turn on mono audio mixing. this is an audio setting on most computers. all sounds will play in both ears equally. i do not prefer this solution because although it works, in my experience it also significantly reduces your sound quality (i have absolutely no idea why this happens.) but it's a solution!

    - turn on subtitles. i have these always on by default, they subtitle almost every sound in the game and the direction it's coming from. incredibly helpful.

i would greatly appreciate an accessibility feature that allows the players to customize sound panning. the subtitles are a great step in the right direction, but unfortunately hearing loss that affects each side differently is a relatively common experience that does not get a lot of attention, and doesn't have many easy solutions.
