There should be more mobs with a mechanic similar to silverfish where they are spawned when the player breaks a block. This would create the impression of lots of life in the world, except it's just hidden.
Some ideas for this:
Mice in grass and in hay bales
Crabs or maybe flounder buried in sand that's underwater
Clams on beaches which could occasionally have pearls in them
Beetles in grass and dirt blocks, as well as a desert version that's a scarab beetle
Songbirds, like bluebirds, finches, or robins, found in leaf blocks (you could make bird houses for them)
Earthworms in dirt blocks that could be added to a composter to make its level increase automatically over time
Also when termites are added, they should be able to go into logs and very slowly break them
