When you are making your redstone suggestions, please note that Java and Bedrock will not have the exact same the same redstone systems - this would require redoing redstone system completely on one platform or the other. The two systems are functionally different and are going to stay that way. Please be sure to tag your suggestions with (Java) or (Bedrock).

Copper pipes, steam engines

It would be fun to heat the water and with the pressure move machines or give life to robots.

Steam can be an alternative to redstone, instead of levers some type of valve can be used, and it can be the parity solution between the java and bedrock versions for redstone

Steam can also be used to feed thermodynamic processes and raise or lower the temperature of a room, conditioning an area that damages mobs or produces frost like in a refrigerator.
