I know Minecraft loves being realistic with their non-life-threatening mobs. Because of this, I decided suggesting the African Spurred Tortoise. The African Spurred Tortoise is the 3rd largest tortoise in the world, however, the single largest species of mainland tortoise. Everyone loves the sea turtle, and with such an empty biome (not for long with the new desert toad) the desert could be spiced up with a new loveable mob!
It's natural habitat is the Sahara Desert. Recognize the name? Single hottest desert in the world, and the Spurred Tortoise loves living there!
Everyone hates it when their favorite pet in Minecraft dies... That's why the Spurred Tortoise would be such a great addition! These giant friends live 70+ years in the wild; and, they have some of the hardest shells, meaning they won't be dying to a single stray arrow from your everyday skeleton.
The Spurred Tortoise's favorite food just happens to be anything green, which includes cactus. You could take two cactus blocks, one for each Tortoise, and breed them to make even more beautiful shelly friends. Just like the much loved sea turtle, the African Spurred Tortoise could also look around the desert for a suitable nesting place. When the babies are born, they could also be just as small as the sea turtle babies.
