If you right click an item onto a copper golem, that item will go in its hand. Once an item is in its hand, it is able to pick up the items needed to craft it from the ground. Then it will access a nearby crafting table and craft the item in its hand after several seconds, and throw the new item towards the player or onto the ground, similar to piglin bartering. The process will repeat until it doesn't have enough materials to craft the item again.
To change which item it crafts, simply right click the copper golem with a new item to be crafted. If it has picked up some of the items to craft something but you want to get them back, right click it with an empty hand and it will drop everything in its inventory and give you back the item it was holding.
To give an example, if you right click on it with a packed ice block, it will take that block into its hand. Once you throw it at least 9 ice, it will head over to a crafting table and stare at it for several seconds. Finally, it will look back at you and throw a brand new packed ice onto the ground, with the original packed ice still in its hand. If it has enough to craft more packed ice, the process will continue until it has crafted all it can. Then to get the left over ice, right click it with an empty hand and it will drop the extra ice onto the ground, as well as put the original packed ice into your previously empty hand.
