Now the glow squid coming in 1.18 seems boring right now. The only purposes I could see from it would be in dark waterlogged caves, where it would allow you to vaguely be able to get through a cave because if you see one and swim towards it, you could possibly reach another. It also has some items, but that's kind of boring. So I have a few better ideas. Now one issue expressed with the glow squid actually glowing is that minecraft can't handle dynamic lighting without something like optifine. So instead, what if the glow squid created a static light source when it leaves behind a cloud of ink? That way, there would be no dynamic light source while the glow squid would still light up the cave. Another idea is that maybe you could create a throwable light source with a light level about double the light level of glow lichen. You use a glowing ink sac and a splash potion to make a throwable light source that could be called "bottle of glowing ink" or something. You throw it and the block it hits gets a texture that looks like a big splotch of cyan/aqua ink. My third and final idea is that staying by a glow squid could give a burst of night vision, like the dolphin's speed boost, and that if you hold an ink sac a glow squid will mistake you for one of their own and follow you at a faster pace than usual, meaning you can have a weaker night vision until the squid leaves the area. It would be a nice way to implement the desired functionality without having to mess with lighting.
