Every village spawns with a chance to contain one villager with a dark secret. At night, they will transform into the Were-Cow, a terrifying beast that attacks any humanoid and undead mobs it sees.
When all the other villagers go to sleep at night, the Were-Cow villager will run far outside the village limits instead, so players don't have to worry about them destroying the village. If you're feeling brave, you can follow the villager and, when it transforms, help to break the poor villager's curse by defeating the Were-Cow. If you defeat the beast, the villager will go back to behaving like regular villagers - it will be so grateful to you that all of its trades and levels are easier to unlock.
I think this would offer some interesting variety and a new challenge to players, and offer an alternative way to get better trades from villagers.
