The first thing that should change is that pillagers should be able to win raids, killing all of the villagers and turning it into an abandoned village. The second thing that I think should happen is that it should be easier for villagers to have babies without the player giving them food.
Mayor - every village would need a mayor once the mayor died a random villager in the village would become the mayor (can’t be a nitwit) the mayor has no work station and will not trade with you
Builder - builders would expand the village with items that the player would put in a specific chest called the builder chest. The builder work station would be a wood cutter which would for the player do exactly what the stone cutter does with stone but for wood instead.
The settler - the settler is a type of villager who will go to abandoned villages or if there are no abandoned villages nearby they will start a new village. When a village has over 15 villagers an event can happen where two of the villagers become settlers (once again they can’t be nitwits) and take some resources from the builder chest. When the settlers get to the location of the new or abandoned village they will change their jobs becoming a mayor and a builder. Well the settlers are traveling they will offer the same trades as wandering traders but instead of wanting emeralds they want food 3 times as much food as the wandering trader wants emeralds, they would still give you emeralds when buying from you.
