Add More "RPG Like" Structures.

As a MMO RPG player that has played many games from many companies, I am always looking for mods/modpacks to add a better combat system or more structures/bosses to make minecraft feel more adventurous. Me and many others would strongly agree that Minecraft is lacking in the RPG aspect. off of my head i can think of structures where you explore and find mini bosses that spawn from trial spawners. or a new villager that gives you quests for rewards.
