It's very inconvenient when you need an item that's at the end of a tab and have to scroll to the bottom of your inventory. It's great if you know the name and can find it using search, but beginners certainly don't know this and will search for items in tabs.
So, I suggest creating groups within tabs. For example, in the building blocks tab, create groups: wood, stone, water, nether, end, materials.
The names make it clear which blocks will be in which group.
Colored blocks are best sorted using two different systems: the first sorts by item, but compactly (like in Bedrock), and the second sorts by color.
Natural blocks can be sorted as: surface, water, caves, ores, wood, plants, seeds.
And it's okay if the same items are in different tabs (like saplings can be in both the wood tab and the plant tab). After all, it will be easier for players to find what they're looking for.
And the player can choose their own inventory sorting method in the menu.
It would be even better if the player could create their own tab organization. After all, every player has different priorities.
It would also be nice if the player could open functional block interfaces without installing them. Either by clicking on an item in their hand or inventory, or by creating a new tab with the interface for the block they need.
