Add actual sheep variations like with cows, chickens, and pigs (not just have them change the color depending on what biome they spawned in), like temperate sheep are the current sheep, cold sheep look woolier, and warm sheep have horns.
Make it so the sheep snouts are 3D, not 2D, like how the other new mob variations have 3D snouts.
Make it so that sheep have wool amount variations, and sheep wool can also slowly grow back without eating. So wool amount variations are where there are 3 wool tiers; when a sheep grows its first tier, it drops 1-2 wool when sheared; the second tier drops 3-4 wool, and the third tier drops 5-6 wool. The different tiers of wool should look different on the sheep so the player knows how much wool they're going to get when they shear the sheep.
When a sheep eats grass, their wool always grows to the third tier, but if the sheep doesn't eat grass, their wool will slowly grow by first going to the first tier, then the second tier, then the third tier.
