Colors in textures not accessible

The color textures for the most recent update for Java (1.21.11) are not accessible. My husband is colorblind (red/green) and this update ruins just about every block for him. And even for normal color vision it is more difficult to look at and kind of off-putting to be honest. If this is a setting and not fully textures, somehow to turn this sepia off, that really should be available. There is an option for the UI, why not textures? Should be built in, should not need a texture pack.
