I play Minecraft Bedrock on Android using Joystick & Aim Crosshair with a multi-finger (claw) layout similar to FPS games. One issue is that when I swipe on the attack button (placed on the left), the screen also swipes. I then have to lift my finger before I can look around again, which causes missed actions in combat and building. Make a setting that can be turned on and off for buttons can be swiped along with the screen. The touch controls are not flexible enough for players who use custom layouts. It would help a lot if we could freely move buttons and UI elements like potion effects, health bar, coordinates, and the hotbar to any part of the screen, including the upper areas. Also add a button to throw items directly when holding them on the hotbar so it's easier than opening the inventory and then manually splitting them in halves. Lastly, the current button design takes up too much space. Round buttons for movement and attack/place would improve visibility and comfort.
