Over the years the old structures have been power crept hard. Mainly dungeon spawner rooms, Mineshafts, Desert Pyramids, Jungle Pyramids and Ocean Monuments.
The general trend over the years is adding easier/better sources of items and old structures haven't kept up with the pace. Newer structures like Trial Chambers and Ancient Cities are extremely good sources of enchanted golden apples, which makes the old structures less competitive. Being able to craft saddles, and in the upcoming snapshot being able to craft name tags, devalues the chest loot of older structures.
Armor trims help a little, but they're only cosmetic, you only need a small number of them and you can duplicate them with diamonds anyway so they aren't a complete solution.
Adding exclusive treasure enchantments to these structures could make them a lot more competitive and more relevant. But even just upgrading the loot pools would help too. I feel like "just look at the Jungle Pyramid loot pool" should be a rock solid argument that old structures have been powercrept to the point of irrelevance. I had a jungle pyramid which had 1 iron ingot and 1 emerald as the only useful loot, so it was worse than random caves you can find anywhere.
