I think it should be possible to edit items more thoroughly using commands, like altering the item name and certain amount of functionality for the items.
For example, imagine giving yourself a goat horn, like Ponder. Using commands, you could rename that horn to "Song of Sorrowful Ghasts" and change its sound to that of the 'Tears' music disc, and give it a light gray enchantment sheen.
Or, if you want give a custom-edited item to a friend, you could just type in another command to duplicate it!
Perhaps you could even edit it so it makes particles appear what you interact with it.
Another possible command could change the way mobs interact with players, like setting one to be 'invisible' to some/all mobs, or making it so some or all mobs are hostile or not hostile to a player.
And yet another command could change the attributes of players or mobs, like changing their base walking speed, mining speed, swimming speed, hunger bar amount/speed, health bar amount, whether or not they get hurt by sunlight/moonlight or certain liquids/blocks, and so on!
I am aware that implementing these would be highly complex and difficult, and they could break or otherwise mess with pre-existing things like command structures or add-ons, but the idea of being able to fine-tune my worlds with commands has always seemed so exciting to me, and I'm sure many others (from map creators to realm/multiplayer moderators to people like me who like to goof around) would appreciate the unique commands. :)
