Now that saddles are craftable, master level leatherworkers' trades are incredibly underwhelming. It's arguably one of the hardest professions to level up, and they offer a pathetic reward in exchange; Leather armor pieces and saddles, what a joke.
As a clarification, leatherworkers should still sell saddles, but given the fact they are not as valuable as before, it should not be a master level trade.
Allow these villagers to sell, for example, quivers (and add them to the game too). I already have a suggestion about them, where they'd be like bundles with more space but only for arrows that allow you to shoot random arrows from a selection to be able to inflict different debuffs to enemies.
Another option would be to for these villagers to sell leather armour but with incredibly high level enchantments: (Fire/Blast/Proyectile) Protection 3-4, Feather falling 3-4, Thorns 2-3...
It would be balanced because even though the enchantments are very good, the armor protects barely anything so it would be just marginally better than iron, but rarely better than diamond, which is resonable, given the fact armorers are easier to level up and offer straight up diamond gear.
I'm sure Mojang can think more examples, this is just a fraction of what's possible, but definetly saddles should not occupy that place.
