Since Mojang has the rule that every hostile mob must be a creative fantasy creature (not a unicorn or werewolf, for example), the zombie and the skeleton do not fit those rules anymore.
Zombie:
My idea is that zombies originate from villagers and illagers (right now they look like a dead Steve). They are not affected by a zombie virus, but by the Skulk from the Deep Dark. They wear the same clothes they had during their lifetime. This makes sense because the Deep Dark seems to be a destroyed and abandoned civilisation. To add to more lore, the Warden would drop a poppy when killed (was he once protecting the villagers?).
Due to the job they had, they have their own weapons:
- Armourer: wears armour (copper, iron, diamond or chainmail).
- Cleric: spawns with a random effect
- Fletcher: bow
- Leatherworker: leather armour
- Weaponsmith: sword
- Other jobs: normal zombies
- Pillager: crossbow
- Vindicator: iron axe
- Other Illagers: normal Zombies (they have lost their "magic" abilities).
Skeleton:
When Piglin Brutes (and Piglins!) reach the Overworld (or the End), they become zombified. However, the zombified Piglins are not the final state. After spending enough time in the Overworld (or the End), they transform into skeletons. Skeletons now look like piglins (so basically tusks are all that is added to their look). They now have gold weapons, like the Piglins had before they became zombies.
So we would have hostile mobs from every dimension:
Overworld: Spiders
Deep Dark: Zombies
Nether: Skeletons
End: Enderman
