Improvable Skeleton and Zombie Horse Stats

With the next drop being themed around mounts and the zombie horse finally appearing in survival, horse enthusiasts would appreciate skeleton and zombie horses becoming capable of having better stats. This could be only by purely random chance when they spawn, breeding with golden apples or a different special item, or by some other player-induced mechanic.

Skeleton and zombie horses are super cool, but almost completely useless as mounts because of their permanently-terrible stats. There's nothing left to do but kill them after defeating their riders, even though they're passive and harmless afterwards.
