Zombies should path-find to nearby horses to zombify them. The zombie would then hop on the zombified horse and wield a spear.
This should take at least a few seconds, so that they can't instantly turn your horse into a zombie, but it would add an extra layer of difficulty because you wouldn't want to be on your horse while trapped by surrounding zombies!
This would also make zombie horses obtainable, because you could set up a zombification system similar to how you would zombify villagers.
