Allow customization of the "NPC" below-name label for mannequins

In Snapshot 25w36b mannequins always display the text "NPC" below their name. This label is currently fixed and cannot be changed.

It would be very useful if the below-name text could be customized or disabled via commands or NBT. This would allow map makers, content creators, and server owners to use mannequins more flexibly, e.g. showing roles like "Guard", "Vendor", or lore-based names instead of the default "NPC".

    This would increase immersion and it would be cool if we could additionally customize it fully with json text components, also any worry of mistaking them for actual players is overblown because of how we've had similar features for ages in popular multiplayer servers (with plugins) and, if you're in a singleplayer world, well it's kinda obvious
