With the newest snapshot change Mojang have reworked copper golems and they haven't listed it in the change log. Simply put the Copper Golem used to be able to path find overtop/underneath copper chests regardless of any blocks in their way as long as the chest was still openable they would then immediately leave for the next chest because the current one is non-accessible, therefore you could force a copper golem to follow a certain path by placing copper chest 2 blocks below the ground and leaving an air gap, or by placing a slab above a chest 1 block underneath the ground. With the newest Snapshot this has been changed to only let copper golems path find to a chest that is accessible to them thus all paths you want a golem to follow will have to be made with exposed (instead of hidden) Copper Chests. This change is understandable since you wouldn't want copper golems running into walls all the time, but I believe slabs are a good compromise that would allow you to hide the copper chests while still having the copper golems prevented from running into walls.
