I looked to see if anyone suggested this already, but after the Copper Golem (awesome idea btw), how about we skip adding mobs for a few updates/drops/whatever you call them now.
Why? Because there's too many already. Slow down, think, add stuff that expands build options (shelves ftw), movement options (time to fix furnace minecarts?), or improves existing gameplay (Copper Golems ftw [yes I know they're mobs]). We have enough monsters, enough farm animals, enough mounts. We can go a few updates without.
