Hello. Maybe it isn't much but i was wondering that Minecraft already has polar bears, which are great for snowy biomes. It would be a nice addition to also include brown bears for forest and taiga biomes. They could interact with the environment by eating berries from bushes or catching salmon from rivers, making the wildlife feel more natural. Maybe they could also hibernate in caves during the winter, which would add more depth to exploration.
Extra ideas:
Bear dens as a rare structure in forests, sometimes with cubs (neutral unless provoked).
Seasonal behavior – more active in summer/autumn, passive or sleeping in winter.
Drops: realistic items like leather/fur, or honeycomb if they raid beehives.
