My idea is to allow tweaking existing AI and adding new AI via the datapack system. This would add a lot of possibilities in terms of gameplay features and allow lots of unique interactions. This idea was inspired by RetroGamingNow's video "Minecraft doesn't need you" in which he describes a series of incredibly specific random chance scenarios to occur which result in the game being completed by mob interactions. I think it would be really cool to be able to add mob interactions to the current system of action weighting, such as Endermen seek out TNT blocks and enchanted bow wielding skeletons as is mentioned in the video. I think the ability to add custom AI is pretty obviously a powerful one, and maybe easier than tweaking existing AI, but that's what would really allow for such crazy interactions like the ones in the video.
