There is currently the blaze for fire and the breeze for air, but there is no mob for earth or water.
For earth, I was thinking of the bronze, which could live in the dripstone caves, which are currently pretty barren and could use an improvement. Its body could be like a drill, fitting in with all the pointy dripstone, and when you are fighting it, it drills itself into the ground and can pop up behind you. It would be kind of like how the breeze jumps around, but for the bronze it would be in the ground instead of the air. It could also have some sort of dripstone attack.

There is also another post with a good idea for the bronze.
And for the water version, it could be called the balize, which in real life means a pole sticking out of the ocean. For Minecraft I would imagine a mob shaped like a pole floating on the water surface, maybe themed like a squid where it can attack things that are under it. It could remain peaceful as long as you are above water or in a boat, but as soon as you are under, it starts attacking. With this functionality, it could spawn in groups above an underwater structure and guard that structure. And it could move around by jumping on the water surface.

With the elemental set complete, each mob could have their own drops that do unique things. And since the elemental paintings already exist, you can add it so the drops can craft their corresponding painting!
