Villager Bull: Neutral, rideable with saddle, tameable with bread, defends villagers. Bull: Neutral, spawns naturally, attacks illagers, drops beef, leather, Bull Horn. Ravage Cow: Hostile, raid-spawned or bred via Ravager + Cow.
