The final two stages of wheat crops are difficult to tell apart thanks to their similar colouring and shape. While I'm not diagnosed with any vision impairment, I often have to take a few minutes to distinguish the harvest-ready from the unready, and this causes me pretty bad eye strain at times. I can't imagine how difficult it must be for those with vision impairment.
What I suggest is a simple tweak to either of the seventh or eighth stage (probably the seventh) to make them more distinguishable from each other, similar to what has been done with ores in 1.17. There are texture/resource packs available to return wheat to its original form, and while it does fix the issue, the old textures don't mesh well with the more modern ones, and having to search for 3rd party solutions isn't really acceptable.
Wheat is just the major example. While other crops are easier to tell apart, I do still sometimes find myself struggling to tell the difference. Like suggested above, simple tweaks to shapes and colours for the last few stages would be an easy way to fix it.
