The control scheme for VR that was available with the Oculus Rift S made sense before December 2021. Back then, the right Touch controller, which is the main hand, had both the Attack/Destroy and Use/Place functions. This made a ton of sense because that is the hand, in-game, that you theoretically are using to perform those actions and to hold the related items. Things changed, and now Use/Place is on the left Touch controller and Attack/Destroy is on the right Touch controller, which really doesn't feel very natural.
I assume that this was done with the PSVR in mind; with a single gamepad controller, it makes some sense to have these two primary actions on the two main trigger buttons. Unfortunately, because touch controllers actually represent our two separate hands, this makes less sense in Minecraft VR with Touch controllers. It doubly causes confusion for Oculus because the game is running on a PC, which, when not in VR, has both these actions on the mouse, which is usually at the right hand.
It would make a lot of sense to simply allow players using any sort of supported game controller, whether in VR or not, to remap controls as they see fit. I seem to recall this actually being possible in Oculus before Bedrock VR was, ahem, "mucked" up with 1.16.200.
