When I fought the Ancient Guardian in the hidden depths DLC I couldn't beat it first try unlike the other bosses but It made it seem more like a boss and more rewarding when you defeated. My request is simple to make the Minecraft dungeons bosses more dangerous. To do this you could add more health, add more damage or make the summons stronger or in bigger quantities. If the Bosses are just a bit harder It will be a better experience and they will feel more like bosses and less like strong mobs. Also, I think just like the Ancient Guardian the bosses deserve cutscenes. Even though they have spawn animations it would also add to the experience if they had cutscenes it would also fix the problem where players can instantly kill bosses while they are doing the spawn animations. I hope you take my suggestions into consideration.
