Villagers already have quite a number of jobs, but I feel like there are some missed opportunities. Let me explain:
Flowers and dyes are extremely useful for builders, as there are lots of dyable blocks (wool, glass, concrete, terracotta...) all widely used in buildings and decorations, but I feel like they are difficult to gather in large number (you can bonemeal grass or travel to a flower forest) so I propose a double-purpose profession: the beekeeper.
Beekeepers will work on beehives and trade both bee-related items (bottles, shears, combs...) and flowers (to feed their cute bees) as well as dyes, like leather workers and shepherds.
Allright, let's see other useful jobs!
Redstone is quite a pickle to understand, especially for new players. So why not add a mentor for this difficult science? Here I propose the Engineer, a villager that trades all kind of contraptions, from pistons, to slime blocks, to quartz, and, obviously, redstone! Also, this could be a way to introduce players to the concept of firework rockets, making them sell firework stars and other similar items! They could use a new block, like some kind of desk
Last but not least, let's talk about another building-oriented profession: the Carpenter (or the lumberjack). This guy could provide builders with all assorted kind of saplings, leaves, and obviously wood, making it easier for players to get otherwise distant kinds of wood. They can use a block similar to the stonecutter, to craft wooden blocks easier.
