UI Options/ Accessibility (Java)

The current UI (user interface) doesn't have many customization options, other than the scale- which can be improved upon. Having a custom UI scale slider, different fonts, or the option for "dark mode" (similar to the 1.17 snapshot) would make it easier to use and more accessible. For some people. it may be difficult to read the current font or the UI is too bright for them. Adding an in-game option to change this would make the user interface more user-friendly.
