Striders currently have a limited niche use, and is outclassed by the Elytra. We can turn them into unique Nether farm animals, keeping them in our base. Currently they drop string, but we already have plenty of string sources.
How about they drop dirt/netherrack/end stone, depending on the dimension they're at? They could also lay them like chickens. Note that they'll still be native to the Nether! But this gives a good reason to want to transport mobs between dimensions. They seem like an "earthy" mob that chews on the ground, thus the block drops. Don't let them actually grief blocks, though. We could alternatively have a new farm mob that does this!
Currently, these three essential blocks are difficult or even impossible to renew. They're very important for planting and terraforming. But to get them in large amounts, you'd have to destroy the environment, which is undesirable. Renewability is especially important in console edition's limited words, even more so in multiplayer!
