The touch controls for Minecraft haven't changed since the beginning. They're long overdue for an overhaul to make touch controls actually usable.
Here are my suggestions for changes that could help with this:
Replace the D-pad with an analog stick that can be positioned anywhere on the left or right side of the screen in the settings, or could be set to only appear when you tap on the side of the screen you select it to.
Allow all UI buttons to be relocatable and resizable. Things like the toolbar could also be able to be rotated or even just have the toolbar boxes able to be relocated individually.
For the inputs to break and place blocks, there should be an option to have a static on screen button for both, rather than just tapping or double tapping for the interactions to occur
Sprint needs an optional dedicated button as well.
These are just my ideas for ways the touch interface could be made more "modern" and usable, and I understand that coding controls is not an easy thing to do. Controls could probably be an entire minor update by themselves.
