If endermites can be considered something similar to a grub, then they could make a new mob to be what they mature into (though not in real time, except by player intervention to "summon" the monster). On the note of the elytra, this could be where it originates in a lore sense -- not that players could obtain them from defeating this mob, though. Perhaps if a sword had silk touch on it, but that would obviously be more of an easter egg situation than anything else, since you can't get those in survival.

It could be on the more powerful side of things, which would explain why endermen are so intent on killing the grubs before they can mature. Key features would probably be that it could jump very high and glide using its natural elytra to catch up with prey that outruns it on foot.

I like the sound of that Zeffi!

I think a way you could get Elytra from them could be: they have a rare "Elytron" drop, (singular of Elytra) and if you get 2 Elytron you can combine them into an Elytra.

PursuantGull the Flies and Wasps could be interesting, but I'm thinking more along the lines of the Striders in the Nether, or Endermen might be an even better example.

I think the End is suppose to be a very.. strange place in nature, kinda like the Nether. So the creatures there should feel foreign. Another option tho, is they could feel somewhat familiar, but kind of.. warped. Kinda like the Endermen.
