I think that the environment is too prédictible. Only mobs can harm you. Exception: lightnings this is an example of a cool elemental event. But it occurs briefly on one block so it hasn't to have a dedicated existence as an entity. But for something like an avalanche, a tornado, a lava jet in a lava lake, you need somekind of an entity spawning, interacting (with its own randomness), evolving and finally despawning. It could bring so much life in the biomes if when you are exploring the nether, a lava jet appears in the lava lake next to you and throws some dangerous burning lava chunks for few seconds. Some tornadoes in plains throwing you in air if you go in it. Flying bushes in deserts. Avalanches when you climb a mountain. Whirlpools when you cross the seas.
