Mojang has stated that the Warden is not meant to be a mob for players to defeat or farm for drops, it's meant to be avoided. So why not make it unkillable? You can still damage it, and it has a large amount of health, but once you kill it, it'll drop dead for a while, before getting back up again. That way you actually have to play with its mechanics of being blind, avoiding it, instead of trying to kill it with a bunch of arrows from afar or by using maxed-out equipment. Players shouldn't be able to cheese the Warden by trapping it in boats or blocks, either. That'll make it a bit more terrifying, and not just some random tough mob that you kill for drops.
