So the idea of a lumberjack villager isn't new. However, there's more to my request than some others. First of all, every villager occupation has a corresponding job site block. So what would be the lumberjack's job site block? Well, I think a log splitter would be a good fit. It would function very similarly to a stonecutter. One could use it to turn wood planks into slabs and stairs. Or perhaps, though less useful, it could be used to turn logs into stripped logs (or something new like carved wood?). The log splitter seems doable to me, since it has about the same level of usefulness as the stonecutter, which is already in the game. Now on to what the lumberjack villager does. I first got the idea for a lumberjack villager when I was tree farming. I was getting so many saplings and I couldn't use them all, and I thought, wouldn't it be great if I could sell these to a villager? So that would be one of the functions of a lumberjack. The rate would be something like 1 emerald for 16-32 (probably oak) saplings. The trickier question is, what does the lumberjack sell to you? One option is that they could sell you exotic saplings. Depending on where you spawn, you might have to travel thousands of blocks to find acacia or jungle trees. Another option is that they could sell you stuff they found while on the job, such as apples and sticks. People in the past have mentioned trades for enchanted axes and throwing axes, but the former is already available and the later is redundant.
